chore: update .gitignore for egg-info, uv.lock, peft_checkpoints
- Replace timesfm_jax.egg-info/ with generic *.egg-info/ glob
- Add uv.lock (lockfile is environment-specific)
- Add peft_checkpoints/ (training output directory)
